Sheraton Maldives Full Moon Resort & Spa announced the appointment of Daniel Mac Samson as its new Director of Food & Beverage.

With over 15 years of experience across India, the Maldives, Qatar, and Bali, Samson brings a wealth of expertise in multi-restaurant operations, concept creation, pre-openings, and immersive dining experiences.
He began his hospitality journey behind the bar at Taj Hotels Resorts & Palaces in Chennai and quickly progressed into leadership roles across prominent luxury resorts and hotels. Over the years, Samson successfully led F&B operations in India, Bali, and the Maldives, including overseeing multiple outlets, launching new concepts, and spearheading pre-opening teams. His extensive international experience equips him to create dynamic and engaging culinary offerings that blend global trends with local Maldivian flavors. Returning to the Maldives, he remains passionate about crafting memorable gastronomic journeys that highlight the country’s rich culinary heritage.
Samson expressed his enthusiasm for the role, stating that he was eager to create dining experiences that tell a story. From destination dining setups and themed pop-up nights to seasonal and interactive menus, each concept, he explained, would celebrate a local ingredient, a cultural tradition, or a global food trend—leaving every guest with a lasting memory.
Sustainability lies at the core of Samson’s approach. He integrates local ingredients from island farms and the resort’s Furana Organic Garden, together with freshly sourced seafood, ensuring that guests experience the region’s flavors while supporting responsible practices. He emphasized that most guests enjoy knowing their meal comes from a local fisherman or produce grown on the island, as it adds meaning to every bite.
In addition, Samson is committed to fostering creativity among his teams. By encouraging collaborative tastings, idea-sharing, and hands-on involvement in dishes, cocktails, and service moments, he cultivates an environment where innovation flourishes naturally.
